Smoked Salmon Salad is as Kiwi as BBQ’s, backyard cricket and beach holidays. Everyone has a take on their perfect Smoked Salmon Salad and this is one of ours.
It’s not hard to see why it is a New Zealand Favourite, not only is salmon delicious but it’s also packed full of healthy omega-3s and a number of other nutrients. It’s also been associated with the brain development of infants and easing symptoms of inflammatory diseases.

Smoked Salmon – The Main Attraction
There are so many ways to enjoy salmon. Often, we will use if for canapes, or as an appetizer, and sometimes as Tapas to have with drinks. Common, why not, those are all delightful!
But we think that it is also the perfect ingredient for a main meal. This simple but very rewarding recipe is all about smoked salmon being the hero!
This recipe is so easy it’s ready in minutes. Normally a throw together that’s ready that quick isn’t the most appealing on the plate, but not with this recipe, it looks beautiful and it tastes delicious.

200g Smoked Salmon rough chunks
1/2 Red Onion – Sliced into rounds
1/2 Cup Pomegranate Rubies
75g Baby Spinach
Fresh Ground Black Pepper
Fresh Lemon Wedges to serve
1/2 Cup Mayo
1 Tbl Sp Olive Oil
1/3 Cup Fresh Dill
1/3 Cup Fresh Coriander
Salt and Fresh Ground Black Pepper to taste
Lay the baby spinach on a platter. Scatter the red onion rings, place the smoked salmon over the onion and spinach. Sprinkle the pomegranate rubies on top and season with black pepper.
Serve with Lemon Wedge and Dressing
Place mayo, olive oil, dill, coriander and black pepper in a blender and blitz until combined.
